The Easiest 100 percent Whole Wheat Bread Ever - from King Arthur Flour Whole Grain Baking
1-1/4 cups lukewarm water
1/4 cup orange juice
3 Tbsp. molasses
3 cups whole wheat flour
1/4 cup nonfat dry milk
1-1/4 tsp. salt
2 tsp. instant yeast
Bake at Thoroughly grease an 8-1/2 x 4-1/2" pan. Combine all the ingredients in a large bowl. Beat the mixture vigorously for about 3 minutes; an electric mixer on medium-high works well here. Scoop the batter into the prepared pan.Cover the pan with lightly greased plastic wrap and let the dough rise for 1 hour; it won't fill the pan. (My note: Mine rose all the way to the top in 30 minutes - I must have had some really fresh yeast!) It also won't dome as it rises, but will remain flat across the top. While the batter is rising, preheat the oven to 350 degrees F.
Uncover and bake the bread for about 45 minutes, tending it with foil after 20 minutes. The bread is done when it's golden brown on top. Remove it from the oven, and after 5 minutes use a table knife to loosen the edges, then turn it out onto a rack.
Brush with melted butter if desired; this will keep the crust soft. Cool the bread for 30 minutes before slicing.
