Fantastic Bread Recipe

Okay - I'm FINALLY posting this fabulous wheat bread recipe. It passed the test today - my parents like it and want the recipe! I first found this recipe off another blog, but can't for the life of me remember which - so I can't give credit where it is due - sorry! Here it is - have fun with it!

Whole Wheat Kitchen Aid Mixer bread

Before you begin, heat your oven to the very lowest temperature - you will use it shortly! :)

3 cups hot water
1 cup packed brown sugar
1 Tbsp. salt
1/4 cup canola oil
5 cups whole wheat flour
2-1/2 cups all-purpose flour
2 heaping Tbsp. gluten
2 heaping Tbsp. dough enhancer
3 Tbsp. yeast

Add all ingredients into the mixer blow in the order they are listed. Add dough hook and mix on lowest setting for 3-4 minutes. Turn off the mixer and let the dough rest for 5-7 minutes. Turn the mixer back onto the lowest setting and mix for 5-6 minutes. The dough should get to the point that it does not stick to the sides at all. If it is a little bit too gooey, add a small amount of flour down the sides until it does not stick. When you are finished the mixer should look almost clean.

Remove the dough hook and take the dough out of the bowl. Spray the bowl with non-stick spray and return the dough. Lightly spray the top of the dough with the non-stick spray. Place a clean wet dish towel over the bowl and set the bowl in the over for 30 minutes or until the dough is approximately double in size.

Remove dough and punch down. Roll into a long log and divide dough into three. Shape the dough into logs and placed into greased loaf pans. (My grandmother's old pans work SO well for this!) Let dough rise for 20-30 minutes in a warm place. Bake for 25 minutes at 350 degrees Fahrenheit. Remove from pans immediately and cool on rack. Brush tops with butter if desired to keep them soft. Enjoy!
